Hello, heaven. That’s what I’m calling these soft, melt-in-your mouth truffles made with two of my favorite ingredients: cacao and Medjool dates. They’re super rich, but I relish every bite, especially in the morning with my favorite latte. Healthy Vegan is all about delicious, flavorful, satisfying plant-based food packed with nourishment, and these truffles are no exception. And a hint of sea salt and vanilla powder truly elevate the flavor and chocolate experience.
Makes 10 truffles
What you need:
- 15 Medjool dates
- ¼ cup cacao powder
- 1 teaspoon water
- ½ teaspoon sea salt
- ¼ teaspoon vanilla bean powder
- Cacao nibs, unsweetened toasted shredded coconut, and chopped toasted hazelnuts for coating
What you do:
- Into a food processor, place dates, cacao powder, water, salt, and vanilla and blend until a smooth paste forms.
- Wet your hands slightly to prevent sticking, and form truffles into 1-inch balls. Coat truffles in cacao nibs, coconut, or hazelnuts. For a melt-in-your mouth experience, enjoy immediately!

>> While I love eating these truffles when they’re freshly made, it’s not always wise to eat the whole batch at once. :) Store truffles covered in the refrigerator or freezer for a treat any time of day.
>> Why cacao powder? Cacao powder is less processed than cocoa powder and contains no additives. This is my favorite cacao powder because it’s vegan, cold-pressed, and raw!
